1 teaspoon baking powder
1/4 teaspoon salt
4 large eggs
1/2 cup unsweetened almond milk (or dairy-free milk)
2 tablespoons melted butter or coconut oil
1 teaspoon vanilla extract

Instructions
In a medium bowl, whisk together the coconut flour, baking powder, and salt. Make sure there are no clumps.
In a separate bowl, whisk the eggs until they are well combined.
Add the almond milk, melted butter (or oil), vanilla extract, and optional sweetener to the eggs. Whisk until smooth.
Pour the wet ingredients into the dry ingredients. Whisk until just combined. The batter will be thick; this is normal for coconut flour. Let the batter rest for 5 minutes to allow the flour to absorb the liquid.
Heat a non-stick griddle or skillet over medium-low heat. Lightly grease it with butter or oil.
Pour about 1/4 cup of batter per pancake onto the hot griddle. You may need to gently spread the batter slightly with the back of your spoon to form a round shape, as it will not spread much on its own.
Cook for 3 to 4 minutes per side, until the edges look set and bubbles start to form on the surface. Flip carefully.
Cook the second side for another 2 to 3 minutes until golden brown and cooked through.
Serve your fluffy coconut flour pancakes immediately with your favorite toppings.
Notes
For extra fluffy pancakes, separate the egg yolks and whites. Whip the whites to stiff peaks and gently fold them into the batter at the very end.
If you want a slight flavor variation, add 1/2 cup of fresh or frozen blueberries to the batter before cooking.
Coconut flour absorbs liquid quickly, so do not overmix the batter once combined.
