Ingredients
Scale
1 loaf (13-16 ounces) thick-cut bread (like brioche or challah), cut into 1-inch cubes
6 large eggs
1 1/2 cups whole milk
1/2 cup heavy cream
1/2 cup packed light brown sugar
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup granulated sugar
2 tablespoons all-purpose flour
1/4 cup cold unsalted butter, cut into small pieces
1/2 cup cream cheese, softened
1/4 cup powdered sugar
1-2 tablespoons milk (for glaze)
Instructions
Lightly grease a 9×13 inch baking dish. Arrange the bread cubes evenly in the prepared dish.
In a large bowl, whisk together the eggs, milk, heavy cream, brown sugar, vanilla extract, 1 teaspoon cinnamon, and nutmeg until well combined.
Pour the egg mixture evenly over the bread cubes. Gently press the bread down to ensure all pieces absorb the liquid.
Cover the dish tightly with plastic wrap and refrigerate for at least 6 hours, or preferably overnight.
For the cinnamon swirl topping, whisk together the granulated sugar, 2 tablespoons flour, and remaining 1/2 teaspoon cinnamon in a small bowl. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs. Sprinkle this mixture evenly over the soaked bread.
Cover the dish loosely with foil and refrigerate for at least 30 minutes while the oven preheats, or leave covered overnight if you did not add the topping yet.
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Remove the foil cover.
Bake for 45 to 55 minutes, or until the top is golden brown and a knife inserted near the center comes out mostly clean.
While the bake cools slightly, prepare the glaze: Beat the softened cream cheese, powdered sugar, and 1-2 tablespoons of milk until smooth.
Drizzle the cream cheese glaze over the warm French toast bake before serving.
Notes
Use day-old bread for the best texture; it absorbs the custard better without becoming mushy.
If you prefer a thicker glaze, use less milk when mixing the cream cheese.
You can assemble the entire dish, including the topping, the night before. Just wait to add the glaze until serving.
