A moist banana bread recipe featuring a rich cinnamon sugar swirl throughout and topped with a simple cream cheese frosting.

  • 3 very ripe bananas, mashed (about 1 1/2 cups)
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (for batter)
  • 1/2 cup packed light brown sugar (for swirl)
  • 2 tablespoons all-purpose flour (for swirl)
  • 1 teaspoon ground cinnamon (for swirl)
  • 1/4 cup unsalted butter, softened (for swirl)
  • 1/2 cup cream cheese, softened (for frosting)
  • 1/4 cup unsalted butter, softened (for frosting)
  • 1 1/2 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1 tablespoon milk or cream (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas, melted butter, granulated sugar, egg, and vanilla extract until combined.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and 1 teaspoon of cinnamon.
  4. Add the dry ingredients to the wet ingredients and mix just until combined. Do not overmix.
  5. Prepare the cinnamon swirl mixture: In a small bowl, combine the brown sugar, 2 tablespoons of flour, and 1 teaspoon of cinnamon. Cut in the 1/4 cup softened butter until the mixture resembles coarse crumbs.
  6. Pour half of the banana bread batter into the prepared loaf pan. Sprinkle half of the cinnamon swirl mixture evenly over the batter. Pour the remaining batter on top, and then sprinkle the rest of the cinnamon swirl mixture over the top layer.
  7. Use a knife or skewer to gently swirl the cinnamon mixture through the batter in a figure-eight motion a few times.
  8. Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 15 minutes before carefully turning it out onto a wire rack to cool completely.
  10. Prepare the frosting: Beat the cream cheese and 1/4 cup softened butter together until smooth. Gradually beat in the powdered sugar, 1 teaspoon vanilla, and milk until the frosting is creamy.
  11. Once the banana bread is completely cool, spread the cream cheese frosting evenly over the top. Slice and serve.

Notes

  • Use bananas that are heavily spotted or black for the best moisture and flavor.
  • Do not over-swirl the batter; too much swirling will blend the cinnamon mixture into the batter, losing the distinct ribbon effect.
  • If the top begins to brown too quickly during baking, loosely tent the loaf with aluminum foil for the last 15 minutes.
