- 2 cups long-grain white rice
- 3 cups water or low-sodium chicken broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 cup fresh cilantro, finely chopped
- 1/4 cup fresh lime juice (about 2 limes)
- 1 teaspoon lime zest
- Rinse the rice under cold water in a fine-mesh sieve until the water runs clear. Drain well.
- Combine the rinsed rice, water or broth, olive oil, and salt in a medium saucepan.
- Bring the mixture to a boil over medium-high heat.
- Once boiling, immediately reduce the heat to the lowest setting, cover the saucepan tightly, and simmer for 18 minutes without lifting the lid.
- Remove the saucepan from the heat and let it stand, covered, for 10 minutes. Do not remove the lid during this resting period.
- Fluff the rice gently with a fork.
- Stir in the chopped cilantro, fresh lime juice, and lime zest until evenly distributed.
- Taste and add more salt if needed before serving as the base for your burrito bowls.

- For a brighter flavor, use key lime juice instead of standard lime juice.
