1 (8 ounce) package refrigerated crescent roll dough
1 cup granulated sugar
2 teaspoons ground cinnamon
2 (8 ounce) packages cream cheese, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup dulce de leche or caramel sauce (optional)
Instructions
Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking pan.
Unroll the crescent roll dough and press it into the bottom of the prepared pan, sealing any seams.
In a small bowl, mix 1 cup of sugar and 2 teaspoons of cinnamon for the topping. Sprinkle half of this cinnamon-sugar mixture evenly over the dough base.
In a separate bowl, beat the softened cream cheese until smooth. Add 1 cup of sugar and beat until combined. Beat in the eggs one at a time, then mix in the vanilla extract.
Pour the cream cheese mixture evenly over the dough layer in the pan.
If using, drizzle the dulce de leche or caramel sauce over the cheesecake layer. Use a knife to gently swirl the caramel into the filling.
Sprinkle the remaining cinnamon-sugar mixture over the top of the filling.
Bake for 30 to 35 minutes, or until the center is mostly set but still slightly jiggly.
Let the bars cool completely in the pan on a wire rack.
Once cool, cut the mixture into squares or bars before serving.
Notes
For cleaner cuts, chill the bars for at least 2 hours before slicing.
You can use store-bought cinnamon-sugar topping if you prefer not to mix your own.
If you want a thicker churro flavor, you can lightly brush the dough base with melted butter before adding the first layer of cinnamon sugar.
