  • 2 cups cooked wild rice
  • 2 cups cooked, shredded chicken breast
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup milk
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1/2 cup chopped onion
  • 1/2 cup sliced mushrooms (optional)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs (for topping)
  • 2 tablespoons melted butter (for topping)
  • 1/4 cup grated Parmesan cheese (optional topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cooked wild rice, shredded chicken, cream of mushroom soup, cream of chicken soup, chicken broth, and milk. Mix well.
  3. Stir in the frozen mixed vegetables, chopped onion, mushrooms (if using), thyme, and black pepper. Mix until all ingredients are evenly coated.
  4. Fold in the shredded cheddar cheese.
  5. Pour the mixture into the prepared baking dish.
  6. In a small bowl, combine the breadcrumbs, melted butter, and Parmesan cheese (if using). Sprinkle this mixture evenly over the top of the casserole.
  7. Bake for 30 to 35 minutes, or until the casserole is bubbly and the topping is golden brown.
  8. Let the casserole rest for 5 minutes before serving.

  • You can cook the wild rice ahead of time to save preparation time.
  • For a richer flavor, sauté the onion and mushrooms in butter before adding them to the mixture.
