- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 (15 ounce) can tomato sauce
- 4 cups beef broth
- 1 tablespoon taco seasoning
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 12 ounces elbow macaroni or small pasta shape
- 1 cup milk
- 2 cups shredded Mexican cheese blend
- Salt and pepper to taste
- Brown the ground beef and chopped onion in a large pot or Dutch oven over medium heat. Drain off any excess grease.
- Add the minced garlic, taco seasoning, chili powder, and cumin to the pot. Cook for 1 minute until fragrant.
- Pour in the diced tomatoes and green chilies (undrained), tomato sauce, and beef broth. Stir to combine everything.
- Bring the mixture to a boil. Once boiling, stir in the dry pasta.
- Reduce the heat to medium-low, cover the pot, and simmer for 12 to 15 minutes, stirring occasionally to prevent the pasta from sticking to the bottom.
- Remove the pot from the heat. Stir in the milk until fully incorporated.
- Add the shredded cheese, stirring until the cheese melts and the sauce becomes creamy.
- Season with salt and pepper to your taste before serving hot.
Notes
- You can substitute ground turkey or chicken for the ground beef.
- For extra heat, add a dash of your favorite hot sauce when serving.
- If the sauce seems too thick after adding the cheese, stir in a splash more milk until you reach your desired consistency.
