A simple recipe for baked bell peppers filled with seasoned ground beef and topped generously with melted cheese.

  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can tomato sauce, divided
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked white rice (optional)
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the hollowed peppers cut-side up in the prepared baking dish.
  3. Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  4. Add the ground beef to the skillet. Cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  5. Stir in the minced garlic, oregano, salt, and pepper. Cook for 1 minute more.
  6. Mix in half of the tomato sauce (about 3/4 cup) and the cooked rice, if using. This is your filling.
  7. Spoon the beef mixture evenly into the hollowed bell peppers.
  8. Pour the remaining half of the tomato sauce into the bottom of the baking dish around the peppers.
  9. Cover the baking dish tightly with aluminum foil. Bake for 30 minutes.
  10. Remove the foil. Sprinkle the shredded cheese over the top of each stuffed pepper.
  11. Return the dish to the oven, uncovered, and bake for another 10 to 15 minutes, or until the cheese is melted and bubbly.

Notes

  • If you prefer a lower carb meal, omit the rice from the filling.
  • To keep the peppers from falling over, you can cut a thin slice off the bottom so they sit flat before filling.
  • You can use any combination of melting cheese like Monterey Jack or a Mexican blend.
