1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (14.5 ounce) can diced tomatoes, undrained
4 cups beef broth
1 cup water
8 ounces elbow macaroni or small pasta shape
1/2 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup shredded Parmesan cheese
Instructions
Brown the ground beef in a large, deep skillet over medium heat. Drain off any excess fat.
Add the chopped onion to the skillet and cook until softened, about 4 minutes.
Stir in the minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
Pour in the diced tomatoes (with juice), beef broth, and water. Bring the mixture to a boil.
Add the dry pasta to the skillet. Stir well to submerge the pasta.
Reduce the heat to medium-low, cover the skillet, and simmer for 12 to 15 minutes, stirring occasionally to prevent sticking, until the pasta is tender and most of the liquid is absorbed.
Stir in the heavy cream and the Parmesan cheese until the sauce thickens slightly.
Remove the skillet from the heat. Sprinkle the mozzarella cheese evenly over the top of the pasta mixture.
Cover the skillet again for 3 to 5 minutes, or until the mozzarella cheese is fully melted and gooey.
Serve directly from the skillet.
Notes
If the sauce becomes too thick before the pasta is cooked, add a splash more broth or water.
Use a sturdy wooden spoon or silicone spatula when stirring to avoid scratching your skillet surface.
For extra flavor, add 1/2 teaspoon of dried oregano with the Italian seasoning.
