A rich and hearty baked casserole featuring tender chicken, steamed broccoli, and a creamy cheese sauce, topped with a buttery cracker crust for a satisfying comfort meal.

  • 2 cups cooked, shredded chicken breast
  • 4 cups fresh broccoli florets
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup Ritz crackers, crushed
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Steam the broccoli florets until they are tender-crisp, about 4 to 5 minutes. Drain well and set aside.
  3. In a large bowl, whisk together the cream of chicken soup, sour cream, milk, onion powder, garlic powder, and pepper until smooth.
  4. Stir in 1 1/2 cups of the shredded cheddar cheese and the cooked chicken until everything is evenly coated.
  5. Gently fold in the steamed broccoli florets.
  6. Pour the mixture into the prepared baking dish and spread it into an even layer.
  7. In a small bowl, combine the crushed Ritz crackers with the melted butter. Sprinkle this mixture evenly over the top of the casserole.
  8. Bake for 20 minutes.
  9. Remove the dish from the oven and sprinkle the remaining 1/2 cup of cheddar cheese over the cracker topping.
  10. Return to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly and the topping is golden brown.
  11. Let the casserole rest for 5 minutes before serving.

Notes

  • You can use frozen broccoli; thaw and drain it very well before adding it to the sauce.
  • For extra flavor, mix 1/4 cup of grated Parmesan cheese into the cracker topping mixture.
  • If you do not have Ritz crackers, use breadcrumbs mixed with melted butter instead.
