  • 2 cups cooked chicken, shredded or cubed
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 cup uncooked long-grain white rice
  • 1 cup chicken broth
  • 1 cup milk
  • 1 cup shredded sharp cheddar cheese, divided
  • 1/2 cup sour cream
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 cup frozen broccoli florets (optional, for variation)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cooked chicken, cream of chicken soup, uncooked rice, chicken broth, milk, sour cream, onion powder, garlic powder, and pepper. Mix until everything is well combined.
  3. If you are adding broccoli, stir in the frozen florets now.
  4. Stir in 3/4 cup of the shredded cheddar cheese into the mixture.
  5. Spread the entire mixture evenly into your prepared baking dish.
  6. Cover the dish tightly with aluminum foil.
  7. Bake for 45 minutes.
  8. Remove the foil. Sprinkle the remaining 1/4 cup of cheddar cheese over the top.
  9. Return the dish to the oven, uncovered, and bake for another 10 to 15 minutes, or until the rice is tender and the cheese is melted and bubbly.
  10. Let the cheesy chicken and rice casserole rest for 5 minutes before you serve it.

Notes

  • If you use leftover cooked chicken, this recipe comes together very quickly for a weeknight dinner.
  • For extra flavor, substitute half of the chicken broth with dry white wine before baking.
  • This dish freezes well. Cool completely, cover tightly, and freeze for up to three months. Thaw overnight in the refrigerator before reheating.
