4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 cup chicken broth
1 cup heavy cream
4 ounces cream cheese, cubed
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
2 tablespoons fresh parsley, chopped
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
Rub the chicken breasts with olive oil, salt, pepper, and garlic powder. Place the chicken in the prepared baking dish.
Bake the chicken for 20 minutes.
While the chicken bakes, prepare the sauce. In a small saucepan over medium heat, combine the chicken broth and heavy cream. Heat until simmering, stirring constantly.
Reduce the heat to low. Add the cubed cream cheese and stir until it melts completely into the cream mixture.
Stir in the Parmesan cheese until the sauce is smooth. Remove the sauce from the heat.
After the chicken has baked for 20 minutes, remove the dish from the oven. Pour the cream sauce evenly over the chicken breasts.
Sprinkle the shredded mozzarella cheese over the top of the sauce.
Return the dish to the oven and bake for another 10 to 15 minutes, or until the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit) and the cheese is melted and bubbly.
Garnish with fresh parsley before serving.
Notes
For extra flavor, add 1 teaspoon of dried Italian seasoning to the cream sauce.
If the sauce seems too thick after adding the cream cheese, add a splash more chicken broth to reach your desired consistency.
