Rich and Creamy Crockpot Cheeseburger Soup

Make this simple, hearty cheeseburger soup in your slow cooker for an easy, comforting weeknight dinner. It tastes like a classic cheeseburger in a bowl.

Ingredients

  • 1.5 lb ground beef
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups beef broth
  • 2 medium potatoes, peeled and cubed
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 oz cream cheese, cubed
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup bacon bits (optional)

Instructions

  1. Place the ground beef, onion, carrots, and celery into the slow cooker.
  2. Pour the beef broth over the ingredients.
  3. Add the cubed potatoes, Italian seasoning, salt, and pepper.
  4. Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the vegetables are tender.
  5. In the last 30 minutes of cooking, stir in the cubed cream cheese until it melts completely into the broth.
  6. Stir in the heavy cream and shredded cheddar cheese until the soup is smooth and cheesy.
  7. If using, stir in the bacon bits.
  8. Serve hot.

Notes

  • For a thicker soup, mix 2 tablespoons of cornstarch with 1/4 cup of cold water and stir into the soup during the last 15 minutes of cooking.
  • You can use pre-shredded cheese, but freshly shredded cheese melts better.
  • If you do not have a slow cooker, you can brown the beef and sauté the vegetables in a large pot before adding the broth and simmering until potatoes are tender, then proceed with adding the dairy.
