1 medium head green cabbage, thinly sliced
1 tablespoon neutral oil (like canola or vegetable)
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup soy sauce (or tamari for gluten-free)
2 tablespoons rice vinegar
1 tablespoon brown sugar
1 teaspoon sesame oil
1/2 teaspoon cornstarch
2 tablespoons water
Optional: 1/2 cup sliced carrots or bell peppers
Instructions
Prepare the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, sesame oil, and cornstarch mixed with water until smooth. Set aside.
Heat the oil in a large skillet or wok over medium-high heat until shimmering.
Add the minced garlic and grated ginger to the hot oil. Stir fry for about 30 seconds until fragrant; do not let them burn.
Add the sliced cabbage (and any optional vegetables) to the skillet. Stir fry vigorously for 4 to 6 minutes until the cabbage wilts slightly but retains some crispness.
Pour the prepared sauce mixture over the cabbage. Stir constantly as the sauce thickens, which should take about 1 minute.
Remove from heat immediately once the sauce coats the cabbage evenly.
Serve hot over rice or noodles.
Notes
For crisp-tender cabbage, cook it quickly over high heat. Avoid overcrowding the pan, which causes steaming instead of frying.
To add protein, cook 6 ounces of cubed tofu or sliced chicken breast first, remove it from the pan, and add it back in when you add the sauce.
If you prefer a spicier dish, add 1/2 teaspoon of red pepper flakes with the garlic and ginger.
