Brown Sugar Glazed Bacon

A simple recipe for making sweet and savory bacon coated in a brown sugar glaze, cooked until crispy.

  • 1 pound thick-cut bacon
  • 1/2 cup packed brown sugar
  • 1 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with aluminum foil and place a wire rack on top of the foil.
  2. In a small bowl, combine the brown sugar, black pepper, and cayenne pepper if you are using it. Mix these dry ingredients well.
  3. Lay the bacon strips in a single layer on the wire rack. Do not let the strips overlap.
  4. Sprinkle the brown sugar mixture evenly over the top side of the bacon strips. Press the sugar lightly onto the bacon so it adheres.
  5. Bake for 15 minutes.
  6. Remove the baking sheet from the oven. Carefully flip each bacon strip over. Sprinkle the remaining brown sugar mixture onto the second side of the bacon.
  7. Return the bacon to the oven and bake for another 10 to 15 minutes, or until the bacon reaches your desired crispness and the glaze is caramelized. Watch closely during the last few minutes to prevent burning.
  8. Remove the bacon from the oven and let it cool on the rack for 5 minutes before serving. The glaze will firm up as it cools.

Notes

  • For a maple flavor variation, substitute 2 tablespoons of the brown sugar with 2 tablespoons of pure maple syrup in the glaze mixture.
  • If you prefer a less sweet glaze, reduce the brown sugar to 1/3 cup.
  • If the sugar starts to look too dark before the bacon is fully cooked, reduce the oven temperature to 375 degrees Fahrenheit for the remaining cook time.
