1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup prepared pastry cream (custard filling)
1/2 cup semi-sweet chocolate chips
2 tablespoons heavy cream
1 teaspoon butter
Instructions
Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 9 to 11 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, take one cookie and spread about 1 teaspoon of pastry cream onto the flat side. Top with a second cookie to create a sandwich. Repeat with the remaining cookies.
Prepare the glaze: Place chocolate chips, heavy cream, and 1 teaspoon of butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until the mixture is smooth and glossy.
Dip the top half of each filled cookie into the chocolate glaze. Place the cookies back on the wire rack to allow the glaze to set before serving.
Notes
You can make the pastry cream filling one day ahead and store it covered in the refrigerator.
For a quicker glaze, use melted chocolate wafers instead of making a ganache.
If you prefer a flatter cookie, slightly press down the dough balls before baking.
