1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
1 1/2 cups fresh or frozen blueberries (do not thaw if frozen)
Instructions
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour a 9×5 inch loaf pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set this dry mixture aside.
In a large bowl, cream the softened butter and sugar together until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Alternate adding the dry ingredient mixture and the milk to the wet ingredients, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
Gently fold in the blueberries using a spatula. If using frozen berries, toss them lightly with 1 tablespoon of the flour mixture before folding them in to help prevent sinking.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the loaf cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
For a lemon blueberry loaf, add 1 tablespoon of fresh lemon zest to the butter and sugar mixture.
To achieve a tender crumb, mix the batter only until the streaks of flour disappear. Overmixing develops gluten, resulting in a tough loaf.
Store cooled bread tightly wrapped at room temperature for up to 3 days.
For a bakery-style finish, you can top the batter with a simple glaze made from 1 cup powdered sugar mixed with 2 tablespoons milk, drizzled on after the loaf cools.
