- 2 cups rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 cup maple syrup or honey
- 1/4 cup melted coconut oil or butter
- 1 large egg, lightly beaten
- 1 1/2 cups milk (dairy or non-dairy)
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Grease an 8×8 inch baking pan.
- In a large bowl, combine the rolled oats, baking powder, salt, and cinnamon. Mix well.
- In a separate medium bowl, whisk together the maple syrup, melted oil or butter, egg, milk, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients. Stir until just mixed; do not overmix.
- Gently fold in the blueberries.
