Make these easy, one bowl banana protein muffins for a quick, macro friendly snack. They are packed with banana flavor and Greek yogurt for a high protein start to your day.

  • 2 large ripe bananas, mashed
  • 1/2 cup plain Greek yogurt (nonfat or 2%)
  • 1/4 cup melted coconut oil or vegetable oil
  • 1/4 cup maple syrup or honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups whole wheat pastry flour or all-purpose flour
  • 1 scoop vanilla or unflavored whey protein powder (about 30g)
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup mix-ins (optional: chocolate chips or chopped walnuts)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, mash the ripe bananas until mostly smooth.
  3. Add the Greek yogurt, melted oil, maple syrup, egg, and vanilla extract to the mashed banana. Whisk until these wet ingredients are combined well.
  4. In the same bowl (this is your one bowl!), add the flour, protein powder, baking soda, cinnamon, and salt.
  5. Use a spatula to gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix; a few streaks of flour are okay.
  6. If using, fold in your chocolate chips or walnuts now.
  7. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For easy freezer protein muffins, cool the muffins completely, then place them in a freezer-safe bag or container. They keep well for up to 3 months. Thaw overnight on the counter or microwave for 30-45 seconds for a fast post workout snack.
  • If you want an extra protein boost, use Greek yogurt banana muffins as a base and add 1/4 cup of collagen peptides to the dry ingredients.
  • To keep sugar low, use a sugar-free sweetener in place of maple syrup, but you may need to add a splash of milk if the batter seems too thick.
