2 large ripe bananas
1 cup rolled oats
2 large eggs
1 teaspoon baking powder (optional, for extra fluff)
Cooking spray or oil for the pan
Instructions
Place the rolled oats into a blender. Blend until the oats form a fine flour consistency.
Add the ripe bananas and eggs to the blender. If using, add the baking powder now.
Blend all ingredients until the batter is smooth and creamy. Do not overmix.
Heat a non-stick skillet or griddle over medium heat. Lightly coat the surface with cooking spray or oil.
Pour the batter onto the hot skillet to form small pancakes. Use about 1/4 cup of batter per pancake.
Cook for 2 to 3 minutes per side, until bubbles form on the surface and the edges look set. Flip carefully.
Cook the second side until golden brown and cooked through.
Serve immediately with your preferred toppings.
Notes
Use very ripe, spotty bananas for the best flavor and sweetness.
If you prefer thinner pancakes, add 1 to 2 tablespoons of water or milk to the batter.
