1 (8 ounce) block of feta cheese
2 pints cherry tomatoes
1/4 cup olive oil
4 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
Salt and black pepper to taste
12 ounces pasta (e.g., penne, rigatoni)
Fresh basil for garnish (optional)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
Place the block of feta cheese in the center of a 9×13 inch baking dish.
Arrange the cherry tomatoes around the feta cheese in the dish.
Drizzle the olive oil over the tomatoes and feta.
Sprinkle the minced garlic, oregano, and red pepper flakes over the tomatoes. Season lightly with salt and pepper.
Bake for 30 to 35 minutes, or until the tomatoes have burst and the feta is soft and slightly browned.
While the dish bakes, cook the pasta according to package directions until al dente. Reserve about 1 cup of the pasta cooking water before draining.
Remove the baking dish from the oven. Mash the feta and tomatoes together with a fork, mixing them until a creamy sauce forms.
Add the drained pasta to the baking dish. Toss everything together until the pasta is well coated with the sauce. Add a splash of the reserved pasta water if the sauce seems too thick.
Serve immediately, garnished with fresh basil if desired.
Notes
Use good quality feta for the best flavor.
If you prefer a smoother sauce, you can blend the baked mixture briefly with an immersion blender before adding the pasta.
For a richer flavor, add a splash of white wine over the tomatoes before baking.
