Make this incredibly creamy, high-protein avocado chicken salad without any mayonnaise. It is a quick, healthy lunch idea perfect for keto diets or clean eating, and it holds up well for meal prepping.

Ingredients

Scale
  • 2 cups cooked, shredded chicken breast
  • 2 large ripe avocados, mashed
  • 1/4 cup plain Greek yogurt (optional, for extra tang and protein)
  • 1/4 cup finely diced celery
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon fresh lime juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro or parsley (optional)

Instructions

  1. Place the shredded chicken in a medium mixing bowl.
  2. In a separate small bowl, mash the ripe avocados until mostly smooth. You can leave a few small chunks for texture.
  3. Add the mashed avocado, Greek yogurt (if using), celery, red onion, lime juice, Dijon mustard, salt, and pepper to the chicken.
  4. Use a fork or spatula to gently fold all ingredients together until the chicken is evenly coated and the mixture is creamy. Do not overmix.
  5. Stir in the fresh cilantro or parsley, if you are using it.
  6. Taste the salad and adjust seasoning, adding more salt, pepper, or lime juice as needed.
  7. Serve immediately over lettuce wraps, on low-carb toast, or with your favorite crackers.

Notes

  • For the best creamy texture, make sure your avocados are perfectly ripe, yielding slightly when pressed gently.
  • If you are preparing this for meal prep, store it in an airtight container in the refrigerator for up to 3 days. Add a little extra lime juice right before serving to help keep the avocado fresh looking.
  • To make this keto chicken salad even richer, add 2 slices of crumbled cooked bacon.
