Make crispy zucchini fries quickly in your air fryer using a Parmesan coating for flavor and texture.

  • 2 medium zucchini
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Cooking spray

Instructions

  1. Wash and trim the ends of the zucchini. Cut each zucchini lengthwise into quarters, then cut those pieces into fry-sized sticks (about 3 inches long).
  2. Pat the zucchini sticks very dry using paper towels. This step helps prevent sogginess.
  3. Set up a dredging station with three shallow dishes. In the first dish, place the flour. In the second dish, lightly beat the egg. In the third dish, combine the panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  4. Dredge each zucchini stick first in the flour, shaking off any excess.
  5. Dip the floured stick into the egg, letting excess drip off.
  6. Coat the stick thoroughly in the panko-Parmesan mixture, pressing gently so the coating adheres.
  7. Lightly spray the bottom of the air fryer basket with cooking spray. Arrange the coated zucchini fries in a single layer, ensuring they do not overlap. Work in batches if necessary.
  8. Lightly spray the tops of the fries with cooking spray.
  9. Air fry at 380°F (195°C) for 8 to 12 minutes, flipping halfway through, until golden brown and crisp.
  10. Serve immediately with your preferred dipping sauce.

Notes

  • For extra crispiness, let the breaded fries rest on a wire rack for 10 minutes before air frying.
  • If you want a lower-carb option, substitute almond flour for the all-purpose flour.
  • Serve with marinara sauce or a simple ranch dressing for dipping.
