4 large bell peppers (any color)
1 tablespoon olive oil
1 pound ground beef
1 small onion, chopped
2 cloves garlic, minced
1 cup cooked white rice
1 (14.5 ounce) can diced tomatoes, drained
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup beef broth
1/2 cup shredded mozzarella cheese (optional)
Instructions
Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil.
In a skillet over medium heat, cook the ground beef and onion until the beef is browned. Drain any excess fat.
Stir in the garlic, cooked rice, drained diced tomatoes, oregano, salt, and pepper into the beef mixture. Cook for 2 minutes, stirring constantly.
Spoon the filling evenly into the hollowed-out bell peppers.
Place the stuffed peppers upright in the air fryer basket. Pour the beef broth into the bottom of the air fryer basket, around the peppers, to create steam and prevent drying.
Air fry at 375°F (190°C) for 18 to 22 minutes, or until the peppers are tender but still hold their shape.
If using cheese, sprinkle the mozzarella over the tops of the peppers during the last 2 minutes of cooking.
Carefully remove the peppers from the air fryer and serve immediately.
Notes
For low-carb or keto options, substitute the rice with cauliflower rice or finely chopped mushrooms.
If your peppers are very large, you may need to add 3-5 minutes to the cooking time. Check tenderness with a fork.
To prevent the tops from burning, you can lightly cover the tops with foil for the first 10 minutes of cooking.
