1 (14.75 ounce) can salmon, drained well and skin/bones removed
1 large egg, lightly beaten
1/4 cup panko breadcrumbs, plus 1/4 cup for coating
2 tablespoons mayonnaise
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh dill
1 teaspoon Dijon mustard
1/2 teaspoon onion powder
1/4 teaspoon black pepper
Cooking spray (non-stick)
For Aioli: 1/2 cup mayonnaise, 1 tablespoon lemon juice, 1 teaspoon dried dill, 1 clove garlic minced
Instructions
In a medium bowl, combine the drained salmon, beaten egg, 1/4 cup panko breadcrumbs, 2 tablespoons mayonnaise, 1 tablespoon lemon juice, 1 tablespoon dill, Dijon mustard, onion powder, and pepper. Mix gently until just combined; avoid overmixing.
Form the mixture into 6 equal-sized patties, about 1 inch thick.
Place the remaining 1/4 cup panko breadcrumbs on a shallow plate. Lightly press each side of the patties into the breadcrumbs to coat.
Preheat your air fryer to 380 degrees Fahrenheit (195 degrees Celsius) for 5 minutes.
Lightly spray the air fryer basket with cooking spray to prevent sticking.
Place the coated patties in a single layer in the air fryer basket, ensuring they do not overlap. You may need to cook in batches.
Lightly spray the tops of the patties with cooking spray.
Air fry for 10 to 12 minutes, flipping the patties halfway through the cooking time. The patties should be golden brown and heated through.
While the patties cook, prepare the aioli: Mix all aioli ingredients (mayonnaise, lemon juice, dill, and minced garlic) in a small bowl.
Serve the hot salmon patties immediately with the lemon-dill aioli.
Notes
If you use canned salmon packed in water, drain it very thoroughly to prevent soggy patties.
For extra crispiness, ensure you spray the tops of the patties with cooking spray before the first cook cycle.
If you prefer a lower carb option, substitute almond flour for the panko breadcrumbs.
