  • 1 block (14 ounces) extra-firm tofu
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon neutral oil (like canola or avocado)
  • 1/4 cup sweet chili sauce
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon grated fresh ginger

Instructions

  1. Press the tofu: Wrap the tofu block in several layers of paper towels or a clean kitchen towel. Place it on a plate and put something heavy on top (like a cast iron skillet or a few cans) for at least 30 minutes to remove excess water.
  2. Cut the pressed tofu into 1-inch cubes.
  3. In a medium bowl, toss the tofu cubes with cornstarch, salt, and pepper until evenly coated. The cornstarch is key for crispiness.
  4. Preheat your air fryer to 400°F (200°C) for 5 minutes.
  5. Lightly spray the air fryer basket with cooking spray or brush with a little oil to prevent sticking.
  6. Place the coated tofu cubes in a single layer in the air fryer basket. Do not overcrowd; cook in batches if necessary.
  7. Air fry for 10 minutes. Shake the basket gently, then continue air frying for another 5 to 8 minutes, or until the tofu is golden brown and crispy on all sides.
  8. While the tofu cooks, prepare the glaze: In a small bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, and grated ginger.
  9. Once the tofu is crispy, transfer it back to the empty bowl. Pour the prepared glaze over the hot tofu. Toss gently until all pieces are coated.
  10. Serve immediately over rice or with steamed vegetables.

Notes

  • For maximum crispiness, do not skip the pressing step. Removing water is essential.
  • If your air fryer tends to stick, lightly spray the tofu cubes with oil just before the first cooking cycle.
  • If you prefer a thicker glaze, you can briefly heat the sauce mixture in a small saucepan until it simmers and thickens slightly before tossing with the tofu.
