Make perfectly crispy potato skins in your air fryer. This recipe focuses on achieving a satisfying crunch without deep frying.

Ingredients

  • 4 large Russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked, crumbled bacon
  • 2 tablespoons chopped fresh chives
  • 1/4 cup sour cream (for serving)

Instructions

  1. Scrub the potatoes clean. Pierce each potato several times with a fork.
  2. Bake the potatoes in a conventional oven at 400°F (200°C) for 45 to 60 minutes, or until tender when squeezed. Let them cool slightly.
  3. Preheat your air fryer to 380°F (195°C).
  4. Slice each cooled potato in half lengthwise. Scoop out most of the inside flesh, leaving about a 1/4-inch thick shell. Reserve the scooped potato for another use.
  5. Brush the outside and inside of each potato skin lightly with olive oil. Sprinkle evenly with salt, pepper, and garlic powder.
  6. Place the potato skins in the air fryer basket in a single layer, ensuring they do not overlap. You may need to work in batches.
  7. Air fry for 8 to 10 minutes, flipping the skins halfway through, until the edges are golden brown and crisp.
  8. Remove the skins from the air fryer. Fill each skin generously with shredded cheese and crumbled bacon.
  9. Return the filled skins to the air fryer and cook for an additional 2 to 3 minutes, or until the cheese is melted and bubbly.
  10. Serve immediately topped with sour cream and fresh chives.

Notes

  • For extra crispiness, lightly spray the skins with cooking spray before the second air frying session.
  • Do not overcrowd the air fryer basket; cook in batches if necessary to maintain airflow.
  • If the skins start to look dry during the first cook, add a tiny bit more oil.
