4 (4 ounce) white fish fillets (cod, tilapia, or haddock)
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
2 large eggs, beaten
1 cup panko breadcrumbs
Cooking spray (oil-based)
4 sandwich buns
Lettuce leaves
Tomato slices
For Tartar Sauce:
1/2 cup mayonnaise
2 tablespoons sweet pickle relish
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1 tablespoon finely chopped fresh dill or parsley
Instructions
Prepare the fish: Pat the fish fillets completely dry with paper towels. Set up a dredging station with three shallow dishes.
In the first dish, mix the flour, salt, pepper, and paprika.
In the second dish, place the beaten eggs.
In the third dish, place the panko breadcrumbs.
Dredge each fillet first in the flour mixture, shaking off excess. Dip it into the egg, letting excess drip off. Finally, press the fillet firmly into the panko breadcrumbs to coat completely.
Prepare the tartar sauce: In a small bowl, combine the mayonnaise, pickle relish, lemon juice, Dijon mustard, and chopped dill or parsley. Mix well. Set aside.
Preheat the air fryer to 390°F (200°C) for 5 minutes.
Lightly spray the air fryer basket with cooking spray. Place the breaded fish fillets in a single layer in the basket, ensuring they do not overlap. Spray the tops of the fillets generously with cooking spray.
Air fry for 10 to 14 minutes, flipping the fillets halfway through the cooking time. Spray the second side lightly with cooking spray before flipping. The fish is done when it is opaque throughout and the coating is golden brown and crisp.
Toast the buns lightly in the air fryer or a toaster oven if desired.
Assemble the sandwiches: Place a lettuce leaf and tomato slice on the bottom half of each bun. Top with a crispy fish fillet. Spoon a generous amount of tartar sauce over the fish before placing the top bun on.
Notes
Drying the fish well before breading helps the coating stick better.
Use a high-heat cooking spray for the best crisping results in the air fryer.
If you prefer a tangier sauce, add 1 teaspoon of finely minced capers to the tartar sauce.
