1 cup diced yellow onion
2 cups cooked corned beef, shredded or chopped
2 cups cooked potatoes, diced small (preferably day-old or slightly dry)
1/2 teaspoon salt
1/4 teaspoon black pepper

Pinch of cayenne pepper (optional)
Instructions
In a bowl, toss the diced potatoes with half of the olive oil, salt, pepper, and garlic powder.
Preheat your air fryer to 380 degrees Fahrenheit (195 degrees Celsius) for 3 minutes.
Place the seasoned potatoes in the air fryer basket in a single layer, avoiding overcrowding. Cook for 8 minutes.
While the potatoes cook, heat the remaining olive oil in a small skillet over medium heat. Add the onion and cook until softened, about 4 minutes. Add the corned beef to the skillet and cook until lightly browned, about 3 minutes.
