Make crispy coconut shrimp quickly in your air fryer. This recipe includes instructions for a simple homemade sweet chili dipping sauce.

  • 1 pound large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup sweetened shredded coconut
  • 1/2 cup panko breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray
  • For the Sauce:
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 2 tablespoons rice vinegar
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1 teaspoon sriracha or chili garlic sauce

Instructions

  1. Prepare the shrimp by patting them completely dry with paper towels.
  2. Set up a standard breading station with three shallow dishes. Place flour in the first dish. Whisk eggs in the second dish. In the third dish, combine shredded coconut, panko breadcrumbs, salt, and pepper.
  3. Dredge each shrimp first in the flour, shaking off excess. Dip the floured shrimp into the egg mixture, allowing excess to drip off. Finally, press the shrimp firmly into the coconut-panko mixture to coat thoroughly.
  4. Preheat your air fryer to 390°F (200°C) for 5 minutes. Lightly spray the air fryer basket with cooking spray.
  5. Arrange the coated shrimp in a single layer in the air fryer basket, ensuring they do not touch. Spray the tops of the shrimp lightly with cooking spray for better browning.
  6. Air fry for 8 to 10 minutes, flipping the shrimp halfway through the cooking time, until the coating is golden brown and the shrimp are cooked through.
  7. While the shrimp cooks, make the sauce. Combine sugar and water in a small saucepan over medium heat. Stir until the sugar dissolves completely.
  8. Remove the pan from the heat. Stir in the rice vinegar, lime juice, minced garlic, and sriracha. Let the sauce cool slightly before serving; it will thicken as it cools.
  9. Serve the hot coconut shrimp immediately with the homemade sweet chili sauce for dipping.

Notes

  • For extra crispy results, you can lightly spray the shrimp again with cooking spray just before the final 2 minutes of air frying.
  • If you are cooking frozen coconut shrimp, follow the package directions but reduce the temperature by 10 degrees and check for doneness early.
  • You can substitute lime juice with lemon juice in the sauce if needed.
